I continued w/ the tomatoes from our garden and was craving zucchini as usual to make this fabulous quiche from my new favorite foodie blog: Erin Cooks. What's great about this dish is it uses only 4 eggs total ~ that's for 2 pies! And you make one pie for now and one to freeze for later!
