Recipe | Turkey Chili with Apple Cider Vinegar

I had not meant to post mostly recipes this summer. I was planning to at least break out my dslr once in a while. Maybe even take a photography course. Right now I have 4 days unaccounted for in late August so we'll see if I can still get that accomplished. Too much to do this summer between camp, gymnastics, swim lessons, and travels! But since we've significantly decreased our cholesterol, and waist lines - I figured a few of our family favorites couldn't be too bad to share! I received the following recipe from my friend Elise, who received it from her mom. It is very tasty and the batch doubles very well! Sorry for the instagram photo - it really is tempting to just use the iphone! Ingredients: 1 large can crushed tomatoes 1 med can stewed tomatoes 3 cups kidney beans 2 med onions, minced 3 slices bacon 1 lb ground turkey 1 tsp chili powder 1 Tbsp sugar 3 Tbsp apple cider vinegar 1 clove garlic

Cut up uncooked bacon fry in a large stockpot. Take out bacon and cook onions in the bacon fat. In the meantime brown and drain your turkey meat. Add turkey meat to onions once they are softened and slightly browned. Add garlic and the rest of the ingredients. Cook for one hour. This can be made ahead of time and let to simmer on low on the stove. Increase heat before serving. You really do need the bacon fat since turkey meat is very low fat. Alternately you could swap out the turkey meat and bacon for lean beef.
