Recipe | Pineapple Rice

Well hello there again. Must still be spring break. {insert mega smiley face here} Here's another recipe from my newest favorite foodie blog: Pineapple Rice found at 101 Cookbooks.

Here are some changes I made: I added an extra 1/2 cup pineapple juice to the dressing. The original tasted too salty. I also did 1 Tbl of ginger (ground) in place of fresh. I used 1 can of Dole pineapples instead of fresh. We have a fresh one I just didn't feel like cutting it. I used 1 cup for the dressing and put the rest in the wok. You can use the juice from the can for your dressing as well (save money). I might consider omitting the red pepper flakes next time. I finely chopped the cashews (for Avery) and for some color next time, I would add some slivers of red pepper to the mix. Note I used short grain brown rice. It cooks up like a risotto, nice and creamy. To prepare this I used chicken stock/broth and don't forget brown rice takes a longer time so you can make the rice the night before or the morning of. It's an easy assembly later that night!
