Recipe | Cold Sesame Noodles

{For Katrina & Shelbi} Cold Sesame noodles are a family favorite! And easy since you can make it in the early afternoon (nap/quiet time) and serve for dinner.

Cold Sesame Noodles

1 lb vermicelli spaghetti (thin) ¾ c soy sauce (less sodium is fine) ½ c vegetable oil (or canola) 4-5 tbl sesame oil (real) 3 tbl ground corrinder spice 3 tbl toasted sesame seeds 5-6 scallions diced 1 box frozen peas Diced chicken (optional)

Boil spaghetti as directed. Rinse and let sit in cold water. In saucepan combine soy sauce, oil, sesame oil, ground corrinder, and toasted sesame seeds. Bring to boil and simmer for a few minutes, approx 10. You want the ingredients to blend and the corrinder to not be gritty. Add sauce to spaghetti and toss. Add 1 box cooked peas and scallions. Add chicken optional. Cool in fridge overnight or for 4 hrs. ** After you make this once, you can adjust the sauce flavors to more or less of your taste.
