Another family favorite from Annabel Karmel in Favorite Family Meals. I began the dish at 5:23pm and we were eating dinner by 6:15pm. A 2-person working family dream. Just a note, I always try new dishes over the weekend in case of timing. I always try to avoid the I'm-so-tired-I-am-whining-and-tugging-on-mom's-leg-syndrome. Sesame Beef Stir-fry 1 Tbl sesame oil 1 clove garlic, crushed 1 medium carrot, peeled and cut into matchsticks 8 whole baby corn, cut in half 1 zucchini, cut into matchsticks 10 oz round steak (I used skirt steak), cut into fine strips 1 Tbl cornstarch ½ cup beef stock 2 Tbl dark brown sugar (I used light) 2 Tbl soy sauce (I used light) A few drops of Tabasco sauce (I omitted) 1 Tbl sesame seeds (I used toasted) Heat the sesame oil in a wok (I used large skillet) and stir-fry the garlic, carrot, corn and zucchini for 3-4min. Add the beef strips and continue to stir-fry for 4-5 min. Mix the cornstarch together with 1 Tbl water and stir into the beef stock. Stir this into the wok together with the sugar, soy sauce, Tabasco, and Sesame seeds. Bring to a simmer, cook until slightly thickened, and serve with rice (I used Basmati rice – a family favorite).
In addition to the above changes in parenthesis, I usually do more veggies than beef. Avery loves the baby corn!
